Anzac Biscuits/Cookies

I once had these cookies or biscuits as they should be rightfully called at Oakville Grocery in Healdsburg back when I first moved to California. I'll be honest I'm not a big dessert fan but these checked all the boxes - chewy, crunchy and buttery. They're also ridiculously easy to make and a real crowd pleaser. They might be a tasty treat to bring your Mom on Mother's Day. 

6oz Unsalted Butter 4oz All purpose flour
1tbsp Honey or golden syrup 2oz Coconut (unsweetened)
1 tsp Baking soda 4oz Sugar
1 tbsp Boiling water 4oz Walnuts - roughly chopped. 
4oz Oats  

 

Mix the dry ingredients together.

Melt butter and honey(or golden syrup) in a pot. Dissolve baking soda in the water. Once butter is fully melted add the soda water mix to the butter. 

Pour the melted butter to the dry mixture. Mix together well. 

Scoop up 2tbsp of mix and lay on cookie sheet. Bake at 350F for 10-15 mins or until cookies are golden brown. Serve with a steaming pot of tea or coffee.
