Chopped Vegetable Side
One night recently we hosted a small dinner party while extolling the virtues of the Perfect Prep Cutting Board. You can probably tell from the ingredient list it required some chopping but the combination with steak was sublime and the tomato and vinegar complimented the richness of the meat perfectly.
Ingredients
Three medium carrots, peeled
Three ribs of celery
1/2 cup of minced red onion
One large watermelon radish, peeled
1/2 cup of toasted pine nuts
2 tbsp Italian parsley, chopped
Two medium tomatoes
2 tbsp whole grain mustard
2 tbsp extra virgin olive oil
1 tbsp moscatel vinegar (or white wine vinegar)
Salt and pepper to taste
Chop vegetables into small, roughly equal size pieces and place in serving bowl.
In separate bowl, coarsely grate tomatoes using a box grater, starting from the bottom of the fruit. Discard top portion in stem area. Add mustard, evoo, vinegar and salt and pepper to taste.
Add half of dressing to vegetables and stir to combine. Add remaining dressing, pine nuts and parsley and stir again.
Serves four as a nice side dish to grilled steak.
