Red Pepper Gougeres
These amazing treats have been in my repertoire for over 20 years - originally gifted to me by a dear friend they're perfect with champagne and are always served at our house on New Year's Eve - I've tried many other versions but always come back to this one as it is just the best imho.
1 cup water | 1/2 tsp Dry Mustard |
1 stick butter (4oz) | 3/4tsp red pepper flakes |
1 cup all purpose flour | 1 1/2 tsp Kosher Salt |
4 eggs | 1 1/2 cup Grated Swiss Cheese |
1 tsp Dijon Mustard | 2tbsp Dry Jack Cheese (parm works just as well) |
Preheat oven to 425F. Grease a baking sheet and set aside.
In a saucepan, slowly bring the butter and water to a boil. Once it is boiling, remove from the heat and add all the flour at once, mixing vigorously wtih a wooden spoon until the mixture comes together and forms a ball.
Beat the eggs in one at a time, making sure the egg is incorporated completely before adding the next egg. When all four have been added and the mixture is smooth add the remaining ingredients and mix thoroughly.
Spoon the mixture into puffs three inches wide and 1 inch high. Bake at 425F for 25-30mins or until golden brown.
Serve with champagne or sparkling wine - these will go quickly!
