Smoked Trout Mousse
Ingredients
1 cup Ricotta Cheese (we like Bellwether Farm)
1 cup Smoked Trout - broken up (we like the value at Trader Joes)
2tbsp drained prepared Horseradish
1tbsp Scallions
1 tbsp Chopped Fresh Dill
2tsp Lemon Juice
salt and pepper to taste
Trout Roe (optional)
1. In a food processor, puree the ricotta until it's smooth (the consistency of mayo or sour cream). Scrape into a bowl.
2. Fold in half the trout, then add horseradish, scallions, dill, and lemon juice. Blitz until combined. Season with salt and pepper, then fold in the remaining trout and blitz again, leaving it slightly chunky.
3. Chill in a small serving bowl. When ready to serve, top each portion with a spoonful of trout roe, if desired. Serve with crackers.
