Some Grilling Tips
Tips for grilling rubbed Pork Tenderloin
If you have time (at least 3-4 hours), brine the tenderloin in a mix of cold water, salt and any spices you like. The water should taste as salty as sea water.
If you brine it, be sure to rinse it off before grilling to remove excess salt. You may want to add your favorite rub as well, but go easy as it will be salty from the brine.
Build a two level fire (or, if using a gas grill, set one burner on high and one on low)
Sear on all sides, then move to the lower heat to roast, flipping over after 6-7 minutes
Cook until internal temp is 135 degrees (should take 12-18 minutes total depending on heat and size of the tenderloin). If you prefer your pork more well done we recommend cooking until temp is 150 degrees.
Let rest for ten minutes before slicing at an angle across the grain.
